CHEESE FILLING FOR STUFFED SHELLS, MANICOTTI, ETC

4 cups (2 lbs) ricotta cheese
2 cups (8 oz) shredded mozzarella cheese
3/4 cup parmesan cheese
3 eggs
1 tablespoon parsley
3/4 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper
